Papas  Reibekuchen mit Apfelmus

Ich habe dieses Rezept ausgesucht, weil es ein typisches deutsches Fastfood Gericht ist, welches meistens zur Weihnachtszeit aufgetischt wird.

4 Personen

Zutaten:
Reibekuchen
– 1 kg Kartoffeln
– 2 Zwiebeln
– 3 Eier
– Salz
– Pfeffer
Apfelmus
– 2 kg Äpfel
– 2 EL, gestr. Zucker
– 1/4 Liter Apfelsaft
– etwas Zitronensaft
– Zimt
Zubereitung:
Reibekuchen
1. Die Kartoffeln reiben und zusammen mit den geschnittenen Zwiebeln und Eiern zu einem Teig rühren.
2. Mit Salz, Pfeffer und ggf. etwas Muskatnuss würzen .
3. Den fertigen Teig dann mit Öl in einer Pfanne zu Reibekuchen braten.
Apfelmus
1. Die Äpfel schälen, achteln und Kerngehäuse entfernen.
2. In einem Kochtopf den Zucker schmelzen bis er karamellisiert (ca. 2 Min).
3. Die Apfelspalten dazugeben und bei reduzierter Hitze kräftig umrühren, bis sich der karamellisierte Zucker etwas vom Topfboden löst.
4. Dann den Apfelsaft dazu gießen, zudecken und kochen, bis die Äpfel völlig weich sind.
5. Mit einem Kartoffelstampfer die Äpfel dann zu Püree stampfen.
6. Zum Schluss mit Zucker, Zitronensaft und Zimt abschmecken.
Hinweis:
Falls nach dem Reiben der Kartoffeln zu viel Wasser aus dem Teig tritt, kann man zum Binden etwas Haferflocken oder Kartoffelmehl zufügen.

– 2 1/4 lb potatoes
– 2 onions
– 3 eggs
– salt
– pepper
apple puree
– 4 1/2 lb apples
– 2 tablespoons coated sugar
– 9 fl oz apple juice
– a bit lemon juice
– cinnamon
preparation
potato pancake
1. Make a dough from grated potatoes, the sliced onions and eggs.
2. Season the dough with salt, pepper and some nutmeg if necessary.
3. Fry the finished dough with oil in a pan.
apple puree
1. Peel, cut into eights and remove the core of the apple
2. Caramelize the sugar in a pot (approx. 2 min)
3. Add the apple slices and stir with reduced heat until the caramelized sugar no longer sticks to the bottom of the pot.
4. Pour the apple juice, cover the pot and cook till the apples are completely soft.
5. Mash the apples with a potato masher to puree.
6. Finally season it with sugar, lemon juice and cinnamon.

If after the grating of the potaos too much water comes out of the dough, you can add some oat flakes or potato flour.
